Cream Palak (Spinach) Soup Recipe

Ingredients:
2 cups fresh spinach leaves (palak), washed and chopped and blanched
Few springs of coriander leaves
Few springs of mint leaves
3 cloves garlic, chopped
1 inch of ginger
1 or 2 green chilli
2 tablespoons butter or oil
1 tablespoon wheat flour or corn flour
1 cup water
1/2 cup cold milk
1 teaspoon of honey
Salt and pepper to taste
Lemon juice (optional)
Preparation Steps for Creamy Palak Soup:
In a large pot, heat the butter or oil over medium heat. Add the blanched spinach and garlic and saute. Then add salt and pepper as per taste.
Now grind saute spinach into puree by adding coriander and mint leaves along with ginger and green chilli.
Take a large pan, add oil then add wheat flour. Saute them then add cold milk. Then give stir and add the salt and pepper to taste the milk. Bring it to boil and add spinach puree slowly into seasoned milk, then accordingly adjust the consistency of the soup by adding water.
Reduce the heat to low and simmer for 10-15 minutes.
Remove the pot from the heat and allow it to cool slightly.
Season the soup with salt and pepper to taste.
If desired, add honey and squeeze of lemon juice to the soup for a bright, tangy flavor.
Simmer the soup for a few more minutes until it is heated through.
Serve the creamy palak soup hot with a slice of bread or croutons on top. Enjoy the delicious soup!
