Pudina Kanda Jawari Roti
Ingredients:
Jawari flour 2 cups
Mint leaves finely chopped 1/2 cup
Onion finely chopped 1/3 cup
Garlic finely chopped ½ tablespoon
Green chillies finely chopped 1 teaspoon
Ajwain 1/3 teaspoon
Sesame seeds 1/4 teaspoon
Turmeric powder 1/2 teaspoon
Red chilli powder 1 teaspoon
Sugar 1/3 teaspoon
Salt to taste
Oil 1 teaspoon
Water required to knead dough
Preparation steps:
In a mixing bowl, take jawar flour, add the chopped mint
leaves, onion, garlic and green chillies.
Add ajwain, sesame seeds and the spices, sugar, salt
and oil. Then gently mix all together.
In a plate take a portion of the flour and add drop of water and start kneading the dough. You can add
few more drops of water and at the same time you also need to knead the dough.
With the help of your palm you need to press the dough and make
it round in shape.
I make it on a piece of cloth with hand. You can take help of the rolling pin and make it into paratha size round shape.
Take a tawa on medium heat, and gently lift the Jawari roti, put it on the tawa. Increase the flame for 10 sec, then flip the Jawari roti
with spatula and slow down the heat and allow to cook. Then add a spoon of oil on
one side, flip again and add oil to the other side of Jawari roti.
Cook from both sides on medium heat for 2 to 3 minutes. If you want crispy texture you need to lower the flame and cook till it looks crispy.
Ready to serve Pudina Kanda Jawari roti (Mint Onion Paratha) with plain curd, Chunda or any pickle that you like.
