Pav Bhaji
A delicious combination of Pav (bread rolls) and Bhaji (Vegetable gravy) forms an iconic dish from Mumbai. Pav Bhaji finds its origin in Mumbai and could be easily termed as one of the most popular dishes. It can be served in lunch, dinner and works as a perfect party food. I also found this to be the best way to make my daughter eat some veggies. She relishes Pav Bhaji.
Pav Bhaji Recipe
Pav Bhaji is an Indian food lover's dream. It is an easy to make combination of a spicy curry made up of mixed vegetables cooked in a special blend of spices. It is served with pav preferably shallow fried in butter. This post provides step by step guide to prepare Mumbai street style Pav Bhaji at home. Enjoy this irresistible and mouthwatering dish at home!
Ingredients
Potatoes chopped 3 to 4 medium sized
Onions finely chopped 2 to 3 medium sized
Tomatoes finely chopped 3 to 4 medium sized
Carrot finely chopped 1/3 cup
French Beans chopped 1/3 cup
Cauliflower finely chopped 1/3 cup
Peas 1 tablespoon
Capsicum 1/3 cup
Ginger garlic paste 1 teaspoon
Green chillies paste 1/2 teaspoon
Turmeric powder 1/3 teaspoon
Red chilli powder 1 teaspoon
Cumin seed powder 1/3 teaspoon
Garam masala ¼ teaspoon
Pav bhaji powder 1 tablespoon
Salt to taste
Butter 3 tablespoon
Oil 2 tablespoon
Ghee 2 tablespoon
For garnish
Butter
Lemon wedge
Onions chopped
Coriander leaves chopped

Preparation steps for Pav Bhaji
Take a pressure cooker and heat it on medium flame. Add potatoes,
cauliflower, French beans, peas and carrot. Add two pinches of turmeric, salt
to taste and two cups of water to the
vegetables. Pressure cook for 3 or 4 whistles.
Let the pressure cooker cool down completely then mash the veggies and if required add water to it.
Take a pan or kadhai on medium heat, add oil, ghee and chopped
onions. Sauté till it turns transparent in colour. Add tomatoes and capsicum
to it.
Now add ginger garlic paste, green chilli paste and butter to it, then sauté for 2 to 3 minutes.
Add spices to it and saute for 2 to 3 minutes, then add mashed veggies to the prepared mixture and simmer for 15 minutes.
Check the consistency of the pav bhaji then accordingly add water if required. Keep it on slow simmer for 10 minutes.
Apply butter on the pav and toast them on a pan.
Pav bhaji is ready to serve with dollop of butter on bhaji, chopped onions and a slice of lemon!
