Basundi
It is time for a rich, flavorful and delicious Indian dessert - Basundi. This sweet is popular in the states like Gujarat, Maharashtra, Karnataka and Telangana. If you are yearning for a sweet delight amidst this lockdown, Basundi would be one of the healthiest desserts that can be easily prepared at home.
How to make Basundi at home?
There are two methods to make Basundi at home:
a) Using condensed milk
b) Simmering full cream milk until the milk reduces to almost half of the original quantity
I prefer the second method. Although it is time consuming, it is worth every minute.
Basundi Recipe
Full cream milk 1 litre
Nutmeg powder 1 pinch
Cardamom powder 1/4 teaspoon
Sugar 1/4 teaspoon
Almonds and pistachio chopped 1 tablespoon
Saffron 1 pinch
Preparation steps for Basundi
Boil milk in a large non stick pan. Keep scraping the sides of the pan and mixing.
Cook on low heat till the milk reduces to its half.
Add cardamom powder and nutmeg powder. Mix well.
Switch off the flame. Add sugar and mix well again.
Now it is time to add chopped almonds, pistachio and saffron to the Basundi.
Chill and serve!
